Upgrade install docs to use Git v2.29.0

Instruct users to use Git v2.29.0, which is the version which Gitaly is
going to make mandatory soonish. As the minimum requirements haven't
been changed yet, we also keep the documented current minimum version
requirement of v2.24.0 for now.
