Test the new auto-select behavior by mocking the Apollo client

Previous changes broke some specs because of a scoped slot becoming a
simple named slot, and the v-model now expecting a profile's ID rather
than the full profile object.

When there is only a single profile available in an on-demand scan's
profile selector, it is automatically selected to save the user some
clicks and to prevent potential confusion.
